Banquet Food Choices…

Do what thou wilt shall be the whole of the law.

Beef….chicken…vegetarian.

Such limited descriptions to make your dinner choice with.

As of this week we have more details to share.  Brother Jon and I had a lovely lunch date last Thursday at the Doubletree to taste several banquet options.  Together we narrowed the choices down and have chosen the main courses for our banquet menu.

First, I’m happy to say that our vegetarian option is also VEGAN.  It is also very tasty!  The chef took extra care to order a high quality vegan cheese to replace the feta in the original dish.  I had to ask to double check, because it was very good.

Our veggie/vegan dish is Penne Pasta Mediterranean, with artichoke hearts, kalamata olives, roasted garlic, capers, spinach leaves, and “feta” cheese in a garlic-plum tomatto sauce.

For our chicken dish, we opted for the Roasted Breast of Chicken, with wild mushrooms and artichoke hearts served with sun-dried tomato polenta and an herb au jus.

Imagine this one served next to some seasonal vegetables.

For the beef option, we’ve gone with a classic.  Slow Roasted Prime Rib of Beef-Rib Eye, with garlic mashed potatoes and rosemary au jus lie.  The photo that I took did not do this dish justice, and I think most of you know what prime rib looks like, so I’ll leave that one off.
